First prep all of your ingredients; slice onions, jalapeno pepper, spinach, garlic and onions. Set aside. Next shave thin pieces of cheese off of large block.

Tip #2 Get pan hot before adding meat for a good sear.

Next place about 2 tablespoons of butter into skillet and heat on stove top.   Preheat oven to 375F. While butter is melting begin to prepare chicken.  Lay 2 pieces of bacon down and a chicken breast on top of that.  Next add on a generous amount of spinach, a few pieces of cheese, and begin to roll.

Tip #3 Never let butter burn or it creates a bitter taste.

Once butter is melted and pan is hot, carefully lay each piece of chicken into pan.  Once that side has browned rotate about 90 degrees until you have come to a complete circle.

Tip #4  Use tongs to flip chicken for more stability.

Once all sides of chicken have been seared and are crispy.  Please place chicken onto pan and place into oven for another 15-20 minutes. While chicken is in oven begin to prepare the orange glaze.  Start by melting 2 tablespoons of butter in a saucepan, once melted add in about 4 cups of orange juice.  Let this mixture simmer for a few minutes. Next add in onions, jalapenos, and garlic continue to simmer.  Next add in about a tablespoon of cornstarch and whisk vigorously until desired thickness.  Once proper thickness add in sea salt, black pepper, and sugar until taste is perfect!

Remove chicken from oven, glaze, and serve!
