Bacon Wrapped Stuffed Cornish Hen

Thing’s You’ll Need

  • Stuffing

  • Sausage

  • Cornish Hens

  • Bacon

  • Honey

  • Olive Oil

  • Twine

  • Spices (Salt, Pepper, Garlic Powder, Onion Powder, Thyme)

Tip #1  Cornish Hens are not scary to eat, try them out!

 

First begin by preparing the stuffing.  Follow the directions on the box or if you have time find a recipe online to make your own.  While stuffing is cooking begin to fry up sausage and once cook chop it up and mix it into the cooked stuffing.  Remove from heat and leave lid on the pot until ready to use.

Preheat oven to 400F. Next take your hens and remove any giblets from cavity.  Rinse each hen and pat dry.  Now take each hen and stuff the cavity full of stuffing. Using your twine tie the legs together and lay bacon on top in “x” shape.

 

Next mix equal parts honey and olive oil into a bowl with the spices listed above.  Mix vigorously until everything is combined, and using a brush or spoon coat each hen with the glaze.

 

Place your hens in the oven for about 1.5 hours before lowering the oven to 300F to cook out for the next hour.  To determine if hens are done stick a meat thermometer into the breast and make sure it is at 165F.  If it is not then prepare to cook at 300F for as long as it takes temp to rise.  Once hens are at temperature plate and serve with some nice apple cider gravy!

 

Suggestions:

  • Serve with a side of greens to balance out the protein and starch!

  • When hens are finished give them some extra glaze to really sweeten them up.
