Chicken Tostadas

Thing’s You’ll Need

  • Ground Chicken

  • Tostadas

  • Garlic

  • Green Bell Peppers

  • Scallions

  • Cilantro

  • Corn

  • Tomatoes

  • Red Onion

  • Lettuce

  • Sriracha

  • Favorite Hot Sauce (Jalapeño based)

  • Olive Oil

  • Lime

  • Sour Cream

  • Red Wine Vinegar

  • Honey

  • Cheddar Cheese

  • Spices(Garlic Powder, Onion Powder, Sea Salt, Black Pepper, Cumin, Chili Powder, Cayenne)

 

Tip #1  Don’t just grab the stores taco seasoning mix, create your own!

 

First prep the pickled red onions.  Start by mixing equal parts red wine vinegar and olive oil into a container.  Next thinly slice red onions and chop up cilantro, add them into mixture.  Now take honey and make sure to add enough to coat the all the onions.  Add in salt and peppers, cover, and refrigerate for at least an hour.

 

Next begin veggie prep.  As seen below; chop garlic, red onions, green bell peppers, cilantro, and scallions.

 

Tip #2 Instead of ground beef try a healthier option; ground chicken or turkey.

 

Coat the bottom of a large pan with olive oil and place on medium heat. Once hot add in garlic and let it sweat out for a couple of minutes and then add in the onions and bell peppers.  

 

Let them cook for about 5-7 minutes before adding in the ground chicken.  Mix it up, cover, and let the chicken cook through (giving it the occasional stir).  While cooking the chicken, mix the spices together in a separate bowl and taste until perfect.  For that Mexican flavor kick it up with cumin and chili powder.  Add it into the pan with about 2/3 cup of water, cilantro, scallions, and a good amount of Sriracha. Stir and lower to a simmer until ready to serve.

 

Tip #3 Make sure to always serve your meals hot and ready!

 

Now time to assemble.  First heat tostadas in oven on 350 F for about 5 minutes.  Next add on a layer of ground chicken and cover with cheddar cheese.  Place back into the oven until cheese has completely melted. Remove and add on corn, chopped tomatoes, shredded lettuce. Next place a dollop of sour cream on top and garnish with pickled onions and your favorite hot sauce. Serve with a squeeze of lime.

 

Suggestions:

  • Goes great with a frozen margarita.

  • Great as an appetizer and a centerpiece to any meal.
