Things You’ll Need

Hard Shells 
Small Soft Shells
Mexican Style Chicken 
Lettuce
Corn
Red Onions
Tomatoes
Fresh Cilantro
Fresh Basil
Lime
Spices(Cumin, garlic powder, paprika, chili powder, salt, pepper, etc)
Sour Cream
Avocados
Sugar
Garlic
Mexican Blend Cheese

Making Dos Capas is super easy with only a few steps!  Its also easy to eat...with the soft shell holding in the hard shell and fillings it makes it less messy to chow down!

 

Tip #1 Mexican food is all about improv

Dice the chicken and set aside. Now heat a dash of vegetable oil in a skillet on medium heat, add garlic and let sit for a minute or so.  Add the diced chicken and cook thoroughly.  Once chicken is cook through add diced onions and green peppers.  Cover and let the onions and green soften. Add about a 1/4 cup of water to the skillet. Now time to add your spices(Cumin, garlic powder, paprika, chili powder, salt, pepper, etc)…I can’t tell you exact amounts to add of each, but you be the judge.  Add the spices I listed in the ingredients section at your discretion (Add this point if you like spicy foods then add you favorite hot sauce to the chicken). Lower the heat and let simmer until use.

 

Tip #2 Make as much as you like, You like onions well then add more onions!

Now time to prep your vegetables!  Dice your red onions, garlic, and tomatoes and set aside in separate bowls.  Now chop your cilantro and basil (Set aside separately).

 

Now open your avocados, remove the seed and mash up into bowl until smooth.  Incorporate in a portion of your prepared garlic, red onions, cilantro, a squeeze of lime, and a dash of sugar…Mix it up! Taste and add more lime or sugar depending on flavor.  This is your guacamole! Next we prep our corn and tomato salsas. Open your can of corn and drain out the liquid.  Place in small bowl and mix in basil and red onions.  Set aside.  To make your tomato salsa take the diced tomatoes mix in red onions, cilantro, and cumin…that’s all there is to it. Set it aside.

 

Tip #3 Clean as you go…makes for less cleaning afterwards

Time to Assemble! Preheat oven to 350 and a skilllet on medium heat.  Place hard shells into oven and bake until hot, while they are baking heat up small soft tortillas on each side until bubbles start to form.  Now take soft shell and place hard shell into it then begin to load with ingredients.  Start with cheese, chicken, corn salsa, tomato salsa, lettuce, hot sauce, sour cream, and guacamole.  If you would like to get your soft shell to stick to hard shell you can put the guac inbetween the shells =) Sneakyyyy eh?

 

Suggestions:

  • Pick a nice sauce to go on top of each dish. I prefer maybe garlic and herb, or a chipotle ranch.

  • For more Mexican flavor add some fresh cilantro on top on any dish.

  • Serve with a white wine, corona, or if your feeling a bit ambitious maybe a strawberry patron margarita.
