Fiesta Chicken

Things You’ll Need:

  • Boneless chicken breasts (Thinly Sliced)

  • Salsa 

  • Jalapeños

  • White Vermont cheddar

  • Olive oil

  • Garlic

  • Cilantro

  • Lime

  • Spices(Cumin, onion powder, garlic powder, salt, pepper)

 

Tip #1 Make it as spicy as you like it!

 

Preheat oven to 350 F and heat olive oil in a medium sized skillet.  For this recipe I used chipotle olive oil it adds a nice flavor to the chicken. Season the chicken on each side with the spices listed above.  Dice garlic, add to skillet, and let it sizzle for a couple of minutes.  Next add the chicken and sear until browned on each side.

 

Tip #2 Do not let the garlic burn, it adds a bitter taste.

 

Removed chicken from skillet and place in an oven safe baking pan. Smother the chicken with your favorite salsa (Tostitos Medium) followed by the shredded white cheddar. Place pan in oven and let it bake until cheese is bubbling.  While the chicken is baking use the skillet from the chicken to grill some slices of jalapeños and chop up cilantro for garnish. When chicken is ready remove it from the oven, add jalapeños and cilantro, squeeze of lime, and serve!

 

Suggestions:

  • Finish the dish off with some Sriracha for a nice kick.

  • Serve with a side of tortilla chips and mexican flare salad.

  • Definitely squeeze some lime over the top while eating!

  • Try to use some salsa con queso for a different taste!
