Messy Barbecue Chicken with Grilled Perogies

BBQ Chicken

Things You’ll Need

  • Boneless Chicken Breasts

Marinade:

  • ½ Cup Ketchup

  • ¼ Cup Duck Sauce

  • 1 Tablespoon Red Curry Paste

  • ¼ Cup Light Brown Sugar

  • Sea Salt

  • Black Pepper

  • Onion Powder

  • Garlic

Messy’s BBQ Sauce:

  • ½ Cup Ketchup

  • ¼ Cup Water

  • 1/8 Cup Apple Cider Vinegar

  • Dash of Worcestershire

  • Tablespoon Spicy Mustard

  • 5 Tablespoons of Light Brown Sugar

  • Tablespoon Red Curry Paste

  • Tablespoon Sriracha

  • Spices (Sea Salt, Black Pepper, Onion Powder)

 

Tip #1  Try this recipe with chicken on the bone!

 

First prepare the marinade and leave yourself at least 2 hours to let it sit.  Take your four large chicken breast and place into large bowl.  Add in about 4 cloves of chopped garlic. Add on ketchup, duck sauce, red curry paste, light brown sugar, sea salt, black pepper, and onion powder.  Mix it all well until all the chicken is coated, and refrigerate for at least 2 hours.

 

Tip #2  Taste, Taste, Taste!!!

 

Start the BBQ sauce.  Add in all the ingredients to a small sauce pan and bring to a boil.  Once at a boil lower to a simmer, and let it cook stirring occasionally for at least 45 minutes.

 

Tip #3  Check by touch to see if chicken is cooked through.

 

Preheat grill on high heat and carefully spray with vegetable oil. Lower to medium flame, remove chicken from the bowl and place onto grill. Cover grill and let chicken cook for about 7-10 minutes on each side.  

 

Plate chicken, smother with Messy’s BBQ Sauce and Serve!

 

Suggestions:

  • Serve with a side of my grilled perogies!

  • Drink it with a nice chardonnay to compliment the heat.

Grilled Perogies

Things You’ll Need

  • Perogies (Potato Filled)

  • 2 Tablespoons of Melted Butter

  • Olive Oil

  • Brown Onions (Sliced)

  • Sour Cream

  • Chives

  • Messy’s BBQ Sauce (Recipe to the left)

  • Aluminum Foil

 

Tip #1 Play with your flavors!  Try out new things to use as garnish!

 

Toss perogies in olive oil (Garlic infused works great).  Let them soak it in for about 20 minutes while they defrost.  Slice onions and chop chives.

 

Preheat grill. Next lay out perogies on tin foil and place sliced onions on top.  Fold up sides of tin foil and pour 2 tablespoons of melted butter over the top of them. 

 

Tip #2 Grilling the perogies allows the flavor of butter and onions to soak in!

 

Cover with another piece of tin foil, secure the edges, and place onto grill on medium heat.  Let them cook for about 7 minutes and using tongs, carefully flip the tin foil package. Allow about 5 more minutes on this side.

 

Heat olive oil on high flame in a medium sauce pan.  Remove perogies from grill and pan sear them on each side until golden brown and crispy.  Remove from pan, place onto plate and top with Messy’s BBQ Sauce, a dollop of sour cream, and a pinch of chives.

 

Suggestions:

  • Serve as a side or as an appetizer to any occasion.
