Savory Taquito Cake

Things You’ll Need

  • El Monterey Brand Taquitos

  • 7-11 Monterey Jack Taquito

  • Guacamole (Click here for recipe)

  • Hot Salsa

  • Mexican blend cheese

  • Re-fried Beans

  • Light Sour Cream

  • Light Cream Cheese

  • Cilantro

  • Spices (Cumin and Chili Powder)

 

Tip #1 Use your favorite salsa any style will work!

 

First prepare guacamole.  Set aside. Then preheat oven to 350 F and bake taquitos for about 10 minutes. Place first layer of taquitos down into pan then add a layer of heated re-fried beans, cheese, and salsa.  

 

Put another layer of taquitos on top of that and cover with guacamole and more cheese. Add another layer of taquitos on top and bake until cheese is melted.

 

While cake is baking begin to make the icing. Mix together equal parts sour cream and cream cheese with cumin and chili powder. Mix it really well and set aside.

 

Removed cake from oven and set aside to cool for about 5 minutes. Then take a large serving platter and invert being careful not let it fall apart.

 

Now carefully add on your icing mixture!

 

Garnish with a 7-11 taquito and some cilantro!  Serve it up!

 

Suggestions:

  • Try using 7-11 taquitos as your layers, few are used and they bring so much added flavor.

  • Do not over do it on the icing.  Could overwhelm the entire cake.

  • Try it using steak or beef flavors!
